Mr Shaw has entered into a lease agreement with Berrigan Shire Council for the Tocumwal Foreshore Building.
Mayor Julia Cornwell McKern said council was “all excited by the news”.
“It has been a long process to get a new tenant for this prime location,” she said.
“We are pleased that locals and visitors alike will once again get to enjoy the views of the Mighty Murray while dining on the top deck of the Tocumwal Foreshore Building.
“Council is also excited the new lessee is not only local, but has a proven track record in delivering high quality eating experiences to our community.
“His head chef was recently a finalist in the World Food Championships Australia, held in Melbourne.
“We could not be happier that a team of this calibre will be part of this new offering.”
Mr Shaw signed the lease in mid-December and wasted no time getting into the space to put his own stamp on things.
“We are excited to be in and updating the interior of the building,” he said.
“We are working closely with council to co-ordinate our efforts and ensure repairs and installations take the least amount of time possible.
“We’ve got the best outlook between Albury and Mildura and can’t wait to create a menu to suit.”
The new restaurant is expected to open next month.
“This is a great new option for Tocumwal and the region,” Cr Corwell McKern said.
“Let’s all support this great new venture.”
The foreshore building was completed in mid-2022, and cost about $2 million to build and fit out.
It not only comprises a waterfront restaurant, but commercial shop spaces with all abilities access to the Murray River via a levee spine path.
